How Can Your Kitchen Benefit From Preventative Maintenance?

“A little bit goes a long way” has never been more true than it is for preventative maintenance in a commercial kitchen.

There will always be things that go wrong, and having a plan in place is always a great idea. It can really make the difference between disaster and saving the day. However, with a little preventative maintenance, you might not have as many problems to start with.

Grease Traps and Over-The-Grill Fans

Grease is a major foe in the commercial kitchen. Much like hard water quickly breaks down ice machines and dishwashers, grease can do the same thing to grills and fryers.

With all the foods that are fried and grilled, there are always particles of grease moving through the air. The exhaust fan over the grill actually pulls that grease right in and can become dirty and clogged causing all kinds of problems. Additionally, if not cleaned properly, grease can build up and drip into cooking food.

These two items should be cleaned often and cleaned well. Running through a dishwasher or scrubbing them by hand won’t get the job done. You need to clean these with a product made just for them.

Fryer Thermostat

These under-appreciated pieces of equipment aren’t in plain sight and can often be overlooked until it’s too late. Sometimes when a fryer quits working, it could be that the thermostat is not functioning correctly. While they do go out from time to time, other things can happen to them as well.

If your thermostat becomes caked with grease and oil, it can stop functioning properly. As a result, your heating element works overtime or not at all. Either of these situation will not end well.

From time to time, clean the fryer thermostat and make sure it’s functioning as it should. It could possibly save you a lot of money in the long run.
